Because who doesn’t love chocolate and wine!?
This cake is super rich and moist. Use whatever red wine you like. It should be a dry red. I used a Merlot this time around. Remember you only use about 1 3/4 cup of wine in the recipe (if that), so drink up! I used a bundt pan for ease. I began spraying with baking spray with a flour already in it. You can do the old fashioned grease and flour, but it was late. Preheat the oven to 350 degrees. I also used my Kitchen-aid mixer.
In a large bowl add most of your dry ingredients. You will want to sift your flour and cocoa powder first. Add flour, cocoa powder, baking soda, and salt. Combine.
Move aside. In the mixer, add the butter and sugar. Beat this on speed 2-4 if using a mixer. Let this beat until fluffy. Add eggs and continue to beat. They should become a bit fluffy also. It takes about 4 minutes. Add vanilla during this process.
The next few steps alternate dry and wet ingredients. Using a 1/3 cup measuring cup, I slowly add some of the dry mixture. Continue to mix and slowly pour in some of the red wine. Alternate more dry and wet until all parts are added. Remembering to scrape the edges on occasion. Once all parts are added, I add the brown sugar. Continue to mix for an additional 4 minutes or so. This should great an extremely airy, almost foamy batter.
Pour into greased bundt pan and place in the oven for about 40 minutes. Let cake cool completely before attempting to remove it from the pan.
The glaze is a simple powdered sugar glaze. I used to the microwave to melt the butter and chocolate chips. This should be in for only about 1 minute. Let chocolate sit in the hot butter for another minute or so before mixing. Once the chocolate is completely melted and the mixture is smooth, add the wine and powdered sugar. Whisk until consistency is as desired. Helpful to be sure to sift the powdered sugar again to avoid clumps. Drizzle over cooled cake.
Chocolate Wine Cake
- 1 1/2 cups of flour
- 1 cup of sugar
- 3/4 cup brown sugar
- 3/4 cup cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 sticks or 1 cup of butter, softened
- 2 eggs
- 2 tsp vanilla extract
- 1 1/4 cups red wine (whichever you please)
Chocolate Wine Glaze
- 1/4 cup butter
- 8 oz semisweet chocolate chips
- 1/2 cup red wine
- 1 1/4 cup powdered sugar
