I have two very favorite cinnamon roll recipes. One takes several hours of rising and waiting. The other however, consists of no yeast and no waiting. When you have three kids yelling they want cinnamon rolls for breakfast – you do not want to wait for the dough to rise!
This recipe is perfect for quick -whip me up rolls.
You start by preheating the oven to 400 degrees F. Divide one stick of butter in half. Place one half in a bowl for the filling. Using my stand mixer, I add the dry ingredients. Slowly using the dough hook, combine the flour, sugar, baking powder, and salt.
Once they are throughly combined, add in the second half of the stick of butter. Be sure the butter is softened a bit.
Mix together for about 4 minutes on low-medium speed. Slowly add in the milk and vanilla. Let the mixer continue to combine the mixture until a smooth dough forms. This takes about 5 minutes or so.
In the separate bowl – add brown sugar, sugar, cinnamon, and nutmeg to the butter. Crumble together with your hands or fork.
Now we begin to roll the dough. Dust the surface of your counter with flour and coat the rolling pin. Roll dough out to a large rectangle. It does not have to be perfect and this will be all rolled together anyways. So don’t beat yourself up! Trim the dough if needed to form a rectangle or to even the edges out.
Sprinkle the dough with the sugar mixture.

Begin rolling the dough into a large spiral log. Slowly pull the log to tighten or lengthen if needed.

Cut rolls into one inch pieces. Spray the bottom of the pan (of your choice, circle, square, etc) with coconut cooking spray to avoid sticking. Place rolls face up in the pan.

Place in oven for 20-25 minutes.
In small bowl- combine powdered sugar, milk, and vanilla to create a glaze. Mix together throughly. You may want to sift the powdered sugar ahead of time to avoid clumping.
Pull rolls from the oven and drizzle with glaze. Let sit for about 1-2 minutes before serving. This allows the glaze to set and seep into the rolls.

Glaze:
1/2 cup powdered sugar
1/4 cup milk
1/2 tsp vanilla
