To continue in the theme this weekend, I tried out this soup I saw on TV. It was fabulously rich in flavor and the tequila lime shrimp topped it off!

I started with a few tablespoons of olive oil in a large pan.
I chopped a yellow onion, some bell peppers, and jalapeño. Added them to the pot and began to sweat them out under medium heat.
Once the onions were translucent, I added the cumin, garlic powder, chili powder, and salt.
Mix in some minced garlic. Add one carton of chicken stock. I drained some black beans and rinsed them throughly. Add the beans to the pan.
To the mixture I then added a few tablespoons of lime juice and tomato paste. Be sure that the tomato paste does not stay clumpy. Add a can of diced tomatoes and green chilies to the soup.
Let this simmer for 45 minutes on low/medium heat.

I purchased 20 medium size raw shrimp.

I removed the shells and placed them in a small container with 4 tablespoons of olive oil. I added cumin, chili powder, garlic powder, and a dash of salt. Squeeze the juice of two limes and add 4 tablespoons of tequila. Cover and refrigerate until they’re ready to cook.
After the 45 minutes, prepare the masa. Add the masa to a small bowl and mix with water.
Once the paste is thin and without clumps, slowly mix into the soup mixture. Add 1/4 cup of tequila and let simmer for an additional 30 minutes. Be sure to mix throughly.

Preheat oven to 375 degrees F. Once the 30 minutes are up, begin to bake the shrimp. Line cookie sheet with foil and spray with coconut spray (or other cooking spray). Place shrimp on pan and bake for 10 minutes.
Prep some toppings and serve!
