They have these fabulous Buffalo Chicken Meatballs that are to die for! I decided for Mother’s Day I would make them for us. Surprisingly simple and hot Hot HOT!
I started with one pound of ground turkey. You can use chicken (hence buffalo chicken) for the meatballs, but we had turkey.
In a container add the turkey and sprinkle half of a packet of Ranch seasoning. Cover and refrigerate until ready to roll. I refrigerated the meat for 2 hours.

Preheat oven to 425 degrees F. Line a cookie sheet pan with foil and spray with coconut cooking spray. To prep the meatballs, remove the container from the refrigerator. Season with some salt and pepper. Chop 1 carrot, 1 celery stalk, and 1/8 of a yellow onion (about).
You can add more or less of these veggies for preference. I liked the crunch it added and left my pieces a little larger than expected. Mince 3 cloves of garlic. Add to meat.
Measure 1/4 cup of Panko bread crumbs and add to mixture.

There should be half of the seasoning packet left- you will want to add another half to the meat. Crack open one egg and combine.

Roll meatballs to desired size. The one pound of meat made 9 meatballs. You can make more by making smaller meatballs. Place on pan and bake for 10-13 minutes. Check the meatballs if your oven varies.

In small saucepan begin making the sauce. Add two heaping tablespoons of butter to the pan.

Mince 3 cloves of garlic and another 1/8 of the yellow onion.

Add to the melted butter and cook for about 2-3 minutes. Once onions are translucent add 1/3 cup of chicken stock. Bring to a boil.
Add 2/3 cup of Hot Sauce and bring heat down to medium.
Season with salt and pepper. Pour the remaining Ranch seasoning to the sauce and mix throughly. Continue to cook under medium heat. In small bowl mix together 1 tablespoon of flour and 3 tablespoons of chicken stock.

Slowly add to sauce mixture and continue to simmer on medium.
Remove meatballs from oven. Add to bowl. Cover with sauce and drizzle Ranch dressing. Enjoy!

1/3 and 3 tbsp of chicken stock
2/3 cup hot sauce/buffalo sauce (I used Franks Red Hot)
2 tbsp butter
Ranch to drizzle
Salt and pepper
