Banana Nut Oatmeal Muffins

I couldn’t just make banana nut muffins or banana oatmeal muffins..I love the gritty  texture the steel cut oats provide and the crunch of the nuts.  The best part of this recipe is you can improvise. You can switch up the oats or the nuts easily.

Preheat oven to 375 degrees F. Using a stand mixer, combine bananas, eggs, vanilla, and butter. Slowly begin adding the dry ingredients. Be careful that you don’t over work. Batter should be combined just enough to mix together the dry and wet ingredients.

Place muffin cups into the muffin pan. Spoon batter into each cup. Bake for 16-18 minutes. Remove from oven and cool completely before removing from pan.

Ingredients

2 cups all purpose flour

4 over ripe bananas

2 large eggs

1/3 cup melted butter

1 tsp vanilla

1/2 cup quick cooking oats

1/2 steel cut oats

1/2 cup nuts of your choice ( I used almonds and walnuts)

1 cup brown sugar

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1 tsp cinnamon

1/2 tsp nutmeg
