Quick, easy, fun breakfast idea! Great kids or pre-made for on the run. The beauty of these egg cups is that you can create various different varieties. The denver omelette is a favorite in our house!
Preheat oven to 375 degrees F. Dice onion, pepper, potato, and tomato.

In medium size bowl, mix eggs, milk, salt, and pepper.

Place ham slices in muffin pan. Fill with potato, onion, tomato, and green peppers to fill half way.

Pour in egg mixture. Sprinkle with cheese and some cracked black pepper.
Place in oven for 20 minutes. Slightly cool and serve.

1/4 white onion- diced
1/4 green pepper- diced
1/4 tomato- diced
1/2 cup shredded cheddar cheese
12 thin slices of ham
1/4 cup milk
