This mayonnaise is killer. It has such good flavor and is the perfect creamy addition to so many sauces. Plus it’s Whole30 and only takes a minute.
In a mason jar (or other deep container similar) add one room temperature egg. It has to be room temperature to emulsify easily. Add in salt and ground mustard. Portion out about 1/4 cup of avocado oil into the jar. Using a immersion blender begin blending the egg mixture. Slowly drizzle in the remaining parts of the avocado oil. The mixture should emulsify about half way through. Once blended and to desired consistency, squeeze in a little bit of lemon juice. Not much.
Store with lid in refrigerator for about a week or two.
You can use another light tasting oil- but I prefer avocado oil.

1 1/2 cup avocado oil
1/4 tsp salt
1/4 tsp ground mustard
1 egg, room temp
Squeeze of lemon
